Galbani® Mega Mediterranean Cheese Board

Prepare to amaze with this awe-inspiring display of Galbani Italian cheeses and an array of amazing accoutrements. Ideal for private parties, weddings, or catered celebrations—indulgence is always on the menu with this mega-sized and mega-impressive charcuterie platter.

INGREDIENTS

12–16 oz. Galbani Bel Paese
14 oz. Galbani Gorgonzola
48 slices Galbani Thin Sliced Fresh Mozzarella
16 oz. Galbani Fresh Mozzarella Perles or Ciliegine, drained

ACCOMPANIMENTS & GARNISH

  • Coppa
  • Salami
  • Baby eggplants, roasted or grilled with olive oil, salt, and pepper
  • Sweet peppers
  • Cherry tomatoes
  • Olives (assorted)
  • Endive
  • Blackberries
  • Strawberries
  • Marcona almonds
  • Purple yam chips
  • Fig jam
  • Hot honey
  • Calabrian chili hummus
  • Rosemary or thyme, for garnish

ARRANGING YOUR PLATE

  1. Thinly cut Bel Paese with cheese slicer and shape slices into a large rose. Place at the center of the board.
  2. Crumble Gorgonzola and arrange in a snaking (winding) pattern from one tip of the board to the other.
  3. Fan out the Thin Sliced Fresh Mozzarella across the board.
  4. Place Fresh Mozzarella Perles in a small bowl or in small clusters around the board.
  5. Fold the coppa and salami into attractive shapes. Create meat “rivers” in a wavy pattern or fold into small “roses” for an eye-catching presentation. Arrange the meats next to the cheeses.
  6. Place baby eggplants, sweet peppers, cherry tomatoes, olives, and endive in clusters around the board.
  7. Add blackberries and strawberries for a pop of color and sweetness.
  8. Sprinkle the Marcona almonds and yam chips across the board for added crunch.
  9. Place the fig jam, hot honey, and hummus in ramekins and arrange on the board with small spoons or spreaders for dipping.
  10. Add fresh herbs like rosemary or thyme sprigs for a fragrant garnish.
