Galbani® Parmesan Pasta Wheel

INGREDIENTS

1 Galbani Parmesan Wheel
½ lb. Fresh fettucine
½ stick Salted butter (preferably premium, European-style)
½ cup Cream (not half & half)
  Kosher salt
  Freshly ground pepper
½ cup Galbani Parmesan, grated
3 tbsp. Fresh Italian parsley, chopped
  Red chili pepper flakes, for optional garnish

Blow torch (standard large size for cooking)

METHOD

For The Parmesan Wheel

  1. Begin by cutting off the top rind of the Parmesan wheel, then set the rind aside. 

  2. Using a spoon or knife, hollow out the center of the cheese wheel, leaving about ½” around the edge. The hollowed-out cheese will appear a little rough with divots.

  3. For a smooth appearance, use the blow torch in the hollowed-out area until it’s very hot. With an extra-large serving spoon or ladle, scrape the inside of the cheese wheel to make a smooth bowl. Continue this process until you have reached the desired bowl shape and smoothness. Leave cheese scrapings inside the cheese bowl.

For The Pasta

  1. Boil a pot of salted water to cook the pasta.

  2. Once the water is at a rapid boil, place the pasta in the water and cook until al dente.

  3. In a sauté pan, melt butter, then slowly add cream, and a dash of salt and pepper.

  4. Put the hot, cooked pasta in the hollowed-out cheese wheel. Mix until the cheese is creamy and melted onto the pasta.

  5. Add in cream sauce and toss with tongs.

  6. Add remaining grated Parmesan and a generous amount of freshly ground pepper. Continue to toss.

  7. Add chopped parsley. Add chili flakes, if desired. Plate and serve immediately.
