Cracker Barrel Cheddar & Beer Biscuits

Makes 8–12 biscuits

INGREDIENTS

2½ cups All-purpose flour, plus extra for rolling biscuits
4 tsp. Baking powder
1 tsp. Baking soda
¾ tsp. Kosher salt
½ cup Cold, unsalted butter, cubed (1 stick)
½ cup Cracker Barrel Medium Cheddar Shreds
¼ cup Chopped chives
⅛ tsp. Fresh cracked black pepper
1 cup Pale ale beer
   

METHOD

  1. Preheat oven to 425 degrees F.
     
  2. Stir flour, baking powder, baking soda, and salt together in a mixing bowl.
     
  3. Add butter and cut it into flour mixture, using paddle attachment until mixture is coarse and has small butter pieces throughout.
     
  4. Stir Cheddar, chives, and pepper into mixture.
     
  5. Slowly add beer to mixture and stir until everything is not quite combined. Dough should be lumpy, shaggy, and a little dry.
     
  6. Turn dough out onto lightly floured cutting board. Fold dough over itself a few times, then gently pat it into a 1-inch-thick round.
     
  7. Use a 2-inch biscuit cutter to cut biscuit rounds.
     
  8. Line a large baking sheet with nonstick baking mat or parchment paper. Place biscuit rounds on pan. Leave at least 1 inch of space between each biscuit. Bake for 10–15 minutes, until biscuits are lightly browned. Serve immediately.
