Cracker Barrel Cheddar & Beer Biscuits
Makes 8–12 biscuits
INGREDIENTS
2½ cups | All-purpose flour, plus extra for rolling biscuits |
4 tsp. | Baking powder |
1 tsp. | Baking soda |
¾ tsp. | Kosher salt |
½ cup | Cold, unsalted butter, cubed (1 stick) |
½ cup | Cracker Barrel Medium Cheddar Shreds |
¼ cup | Chopped chives |
⅛ tsp. | Fresh cracked black pepper |
1 cup | Pale ale beer |
METHOD
- Preheat oven to 425 degrees F.
- Stir flour, baking powder, baking soda, and salt together in a mixing bowl.
- Add butter and cut it into flour mixture, using paddle attachment until mixture is coarse and has small butter pieces throughout.
- Stir Cheddar, chives, and pepper into mixture.
- Slowly add beer to mixture and stir until everything is not quite combined. Dough should be lumpy, shaggy, and a little dry.
- Turn dough out onto lightly floured cutting board. Fold dough over itself a few times, then gently pat it into a 1-inch-thick round.
- Use a 2-inch biscuit cutter to cut biscuit rounds.
- Line a large baking sheet with nonstick baking mat or parchment paper. Place biscuit rounds on pan. Leave at least 1 inch of space between each biscuit. Bake for 10–15 minutes, until biscuits are lightly browned. Serve immediately.
