This mild, slightly tangy, semisoft cow’s milk cheese was invented by Egidio Galbani—so it’s a true original. Available in a shreddable wheel as a versatile table cheese that also adds wow to pizza, mac and cheese, risotto, and meat. Try it in recipes as a substitute for Mozzarella. Also available in a spreadable “crema” imported from Italy.
