Cracker Barrel Cheddar Pimento Burger

Serves 4

INGREDIENTS

For the Pimento Spread

2 cups Cracker Barrel Sharp Cheddar Block, freshly grated
8 oz. Cream cheese, room temperature
4 oz. Pimento peppers, well drained & chopped
2 tbsp. Mayonnaise
¼ tsp. Garlic powder
¼ tsp. Onion powder
¼ tsp. Ground cayenne pepper
¼  Small jalapeño pepper, ribs & seeds removed, minced
  Freshly ground black pepper, to taste
   

For the Burgers

1 lb. Ground beef (80/20), formed into 4 patties
  Kosher salt, to taste
  Pickled jalapeño slices
  Romaine lettuce, shredded
  Pickled red onion
  Sourdough bread, sliced thick & grilled
   

METHOD

For the Pimento Spread

  1. In a stand mixer, combine Cheddar, cream cheese, pimento peppers, mayonnaise, garlic powder, onion powder, cayenne, minced jalapeño, and several “twists” of ground black pepper.
     
  2. Store pimento spread in refrigerator.

 

For the Burgers

  1. Season burger patties with salt and cook until medium rare.
     
  2. Layer pickled jalapeño slices and shredded romaine on half of the grilled sourdough slices.
     
  3. Add warm burger patties and top with pimento spread. If heat from the burger does not melt the spread, place briefly under broiler.
     
  4. Top with pickled red onion, then top with remaining grilled sourdough slices.
