Cracker Barrel Cheddar Pizza with Sweet Potato & Kale
Serves 4
INGREDIENTS
1 | Large sweet potato, sliced about ¼” thick |
½ | Red onion, sliced |
4 tbsp. | Extra virgin olive oil, divided |
1 lb. | Whole wheat pizza dough, rolled to 12” diameter |
1½ cups | Fresh kale, chopped |
1½ cups | Cracker Barrel Medium Cheddar Shreds |
1 tsp. | Fresh rosemary, chopped |
1 tbsp. | Balsamic glaze |
Kosher salt & freshly ground black pepper, for seasoning | |
Cornmeal flour, for rolling out dough | |
METHOD
- Preheat oven to 400 degrees F.
- Place sweet potato slices and red onion slices in a bowl and toss with 2 tablespoons of olive oil. Season with salt and pepper.
- Place on a large baking sheet and bake for about 20 minutes, or until sweet potatoes are soft and tender.
- Remove from oven and let cool while preparing the dough.
- Turn oven up to 475 degrees F or as high as your oven will go. If you have a pizza stone, place it in oven to get hot.
- On a lightly cornmeal-floured surface, roll out pizza dough to about ¼-inch thick and 12-inches diameter. Lightly brush dough with remaining 2 tablespoons of olive oil.
- Gently toss kale with roasted sweet potatoes and onions.
- Top pizza dough with Cheddar, then top with sweet potato, kale, and onion mixture. Sprinkle with rosemary.
- Place pizza in oven, directly on pizza stone if using one, or on oven rack. Bake for 10–15 minutes or until pizza crust is golden and Cheddar is melted. Remove from oven and drizzle with balsamic glaze.
